Coffee Origin Information Ethiopia is located in the horn of Africa and is bordered by Somalia to the Southeast, Djibouti to the east, Kenya to the south, Sudan to the east, and Eritrea to the northeast. It occupies the high plateau region between the Nile plains of the Sudan and Eritrea. Ethiopia is one of the largest countries in Africa with an area of over 1.13 million square kilometers. It has a rugged topography with altitudes ranging from around 100 meters below sea-level in the Danakil depression to 4,600 meters above sea-level in the Semien Mountains. Ethiopia is the primary center of origin of the Arabica coffee plant. Coffea Arabica has been growing wild in the forests of the Southwestern Highlands of Kaffa and Buno districts of Ethiopia for thousands of years. As legend has it, coffee was discovered in Ethiopia in the 9th century by a goat-herder named Kaldi. He noticed that his goats became hyper after eating the cherries from the coffee tree, so he tried it himself. A monk approached Kaldi after he consumed the cherries and took some to his monastery. The monk roasted and brewed the coffee to share with other monks. As a result, they were able to stay awake during long nights of prayer. Since then, coffee has been widely accepted as a stimulant drink. Ethiopia has over 70 ethnic groups that speak over 200 languages. As a result, coffee is referred to as Bunna (Amharic), Bun (Tigrigna), Buna (Oromifa), Bono (Kefficho), and Kawa (Guragigna). Some argue that most names for coffee are derived from the names of the districts Kafa and Buno. The French and Spanish call it Cafe, the Italians call it Caffe, the Germans call it Kaffee, the Finnish call it Kahvi, the Dutch call it Koffie, and the Greek call it Kafes. All are phonetic approximations of the Ethiopian word. LekemptiEthiopian Lekempti coffee is grown in the regions of Ghimbi and Wollega and has a brew like that of Harrar longberry varieties – low to mild acidity with a balanced body, but with its own unique dark fruit taste. Additional Notes: Fresh coffee is very sensitive and can change dramatically if it is not stored properly, brewed properly, or kept fresh it can lose its characteristics or gain other characteristics. Coffee flavors listed above are based on the Cupping of the coffee and will vary with the way it is prepared and brewed. Cupping Notes are gathered by using the cupping method to get a general idea of what natural flavor notes a coffee contains. Flavor profile will vary between different brewing methods and roast profiles. For Best Results it might be necessary for the coffee to degas 24 - 48 Hours when it arrives at your location to release trapped gases from within the beans which is a result from the roasting process. As always if you Have any Questions or Concerns Feel free to Reach out to us.

Aroma:Clean Body:Round Acidity:Bright INFORMATION Colombia is the second-largest producer of coffee in the world and the largest producer of washed and Arabica coffees. It's well known for the high quality of its coffee, and about half of its exports come to the United States. Annually, Colombia exports approximately 12.5 million bags and consumes 2 million bags internally. Colombia only produces washed Arabica coffee. There are three primary varieties grown in Colombia, and the coffee is referred to by the region in which it is grown. "Excelso" is a grading term for exportable coffee from Colombia, not related to variety or cupping profile. EP (European Preparation) specifies that the raw beans are all hand sorted to remove any defective beans and foreign material. Excelso coffee beans are large, but slightly smaller than Supremo coffee beans. Excelso beans are a screen size of 15-16, versus Supremo beans, which are sized on screen 17. Colombian coffee is graded before shipment according to bean size. Supremo and Excelso coffee beans can be harvested from the same tree, but they are sorted by size. Excelso accounts for the greatest volume of coffee exported from Colombia.

In the last 10 to 15 years, the plantations have been returned to the ownership and management of the original landowner groups, who now do not use any chemicals or fertilizers in the production process. The cherry is hand picked by the whole group (or clan, as they're called locally) and then pulped on the same day and fermented in cement vats for 36 hours. After the fermentation process, the coffee is washed with fresh mountain stream water from the nearby Aru River and then sun dried until it reaches the nice, even blueish color that coffees from the area are known for. The drying process can take between 7 and 12 days. Workers who perform the processing come from the surrounding villages. The co-op employees between 20 and 60 people during the year, depending on the season (those numbers do not include the clan cherry pickers). In surrounding community, between 10,000 and 12,000 people depend on coffee exporting for income. Papua New Guinea coffees are revered for their interesting acidity and high variety. The country itself is notable for its mountainous topography and the incredible cultural diversity of its thousands of indigenous groups. Historical changes in infrastructure have reduced the number of centralized coffee plantations. Thus, many Papua New Guinea plantations are actually collections of traditional “coffee gardens,” or small plots of as few as 20 plants grown alongside subsistence crops. With an increased introduction of modern processing methods, these already-incredible coffees continue to develop in quality and consistency.
