Both nestled in the Cuilco region, situated in the northern reaches of Huehuetenango bordering Chiapas, Mexico, these farms are under the diligent care of the Villatoro family. Aurelio Villatoro oversees the wet mill, while his nephew, Antonio, specifically tends to the operations at Santa Cruz and Finca Regalito. We have a strong affinity for the coffees produced here and meticulously evaluate numerous batch samples from both farms to select the finest qualities they have to offer. This particular lot consists of 50 bags, representing a harmonious blend of two lots from the farm that exhibit interchangeable cup flavors. Santa Cruz farm's elevation ranges from 1,400 to just under 1,550 meters above sea level. While not considered extremely high altitude for Guatemala, coffee cultivation in this region is limited to approximately 1,750 meters due to the cooler climate. This climate slows down cherry maturation, contributing to enhanced seed density and quality. For over a century, the Guardia family has been cultivating coffee here, traditionally selling their harvest to large mills. However, the landscape changed in the late 90s with Costa Rica's micro-mill revolution. Recognizing the importance of overseeing coffee quality from cultivation to export, the family established their own small milling operation on the farm. Under the leadership of Diego Guardia, the farm has chosen to move away from water-intensive processing methods, instead favoring honey and dry processes. This specific lot employs the "dry process," where whole coffee cherries are dried intact rather than removing the green seed. This method significantly impacts flavor profiles and physical characteristics. With this coffee, expect to discover fruity and wine-like notes, accompanied by a robust body, undoubtedly influenced by the chosen processing method. Additionally, these beans tend to exhibit a slightly darker hue during roasting and produce more chaff compared to fully washed coffees.
