These selected, high-attitude coffee beans, processed using the Natural method, come from Fazenda Grupo BSC in the well-known Sul Minas region of Minas Gerais state in Brazil. We sourced these coffee beans directly from the farm and requested that they be bagged in GrainPro® bags, paying extra, to maintain their quality during shipment to our warehouses in the US. Nelson and Eleni first visited the farm in July of 2011, and have been visiting regularly ever since cupping many samples, discussing coffee production with farm management and met with workers and their families while walking the coffee plantation. The Natural Process is the most common in Brazil and is the one that makes such coffee beans the most popular for espresso blends because of its ability to provide floral hints and rich crema. Under the natural process coffee cherries are harvested and dried directly under the full sun in large concrete patios or mechanical dryers. Neither the skin nor the coffee cherry pulp (mucilage) are removed by means of water or fermentation. The coffee cherries dry and ferment like raisins and provide their characteristic flavor and aroma. The drying is done over a 7-10 day period, until 11% moisture content is reached. After drying, the coffee is kept in wooden silos at the farm's warehouse for resting (reposo). This auction is for ten (10) pounds of a professionally graded and cupped, Specialty coffee. The coffee was originally packed at origin and it is maintained in our warehouses in 59-kilo GrainPro® bags to seal and maintain its quality. These coffee beans will be shipped to you in a boxed, plastic bag. We used to ship 10-lbs coffee in burlap bags.but alas, it is no longer possible to source food-quality small burlap bags. We have also updated our thinking about coffee storage. Kept in a cool dry place coffee stored in the shipped plastic bag will keep for a long time (years). Please read our extensive eBay coffee-products buyers' feedback (100% positive, close to 4,600 transactions. over 2,800 distinct buyers, over 1,750 repeat buyers) and bid with confidence. We are very proud of our record and reputation. In order to reach such distinction, Ebay sellers must uphold the eBay community values, including honesty, timeliness and mutual respect and maintain very demanding Feedback levels. Only a few, select eBay sellers reach this level of distinction and recognition. Please check our other auctions for other grades and quantities, as well as coffee gear. To learn more about us please visit our about page We prefer an unblended (single varietal & origin), moderately dark (#45 Agtron/SCCA) roast for these coffee beans because of their complex flavor and aroma (see cupping notes above). You may want to know, however, that other roasters use them as a mandatory component of their special "secret" blend., specially for Espresso. We stock and sell high-quality, graded Bolivian, Brazilian, Colombian, Costa Rican, Decaf & Cup of Excellence® coffees. We decaf our own coffee beans. Some of our coffee beans are organic, some are Fair Trade, and none have defects (rocks, ferment, insect attacks, mold, etc). We carry Specialty, Microlots, and Cup of Excellence® green coffee beans. We also carry our own high-quality 90-points South American blend (Colombia & Brazil) chemical-free, water decaffeinated coffee beans. Our US coffee warehouses are located in the Boston, New York, Oakland & Seattle areas. What is "Specialty" coffee? There are two major species of coffee, robusta and arabica. Robusta is grown at low altitudes, under full sun, has almost twice as much caffeine, and is the main ingredient of cheap, flavorless, "blended" commercial coffee available everywhere. Arabica, grown at high altitudes (4,000 to 6,500 feet) with abundant rain fall, warm temperatures, fertile soil and adequate shading develops superior coffee flavors. Picked by hand only at the peak of ripeness, these arabica beans are processed with care and meticulously graded and separated by bean size and density. All of the world's great coffees are 100% arabica, but only the top 10% have fine enough flavor to be selected as Specialty coffee. The fine flavor is determined by the cupping score. To be considered Specialty, the cupping score must be at least 80, using the SCAA criteria. What is "Premium" coffee? According to the SCAA Standard Classification Method, arabica green coffee beans are graded according to Category 1 and Category 2 defect equivalents. Specialty coffee cannot have any Category 1 defects and may only have up to five Category 2 defects. Premium coffee may only have up to eight defects in either category. Graded coffee with more than eight defects is considered "commercial" or "below grade". After cupping, the remaining 90% of the fine arabica coffee, with still superb flavor, is considered Premium coffee. What is "conventional/commercial" coffee? The remaining coffee, the majority of which is traded in the commodity markets, is considered "conventional, commercial" coffee. It includes all robustas and the lower-quality arabicas. What is "cupping"? It is a professional technique for evaluating coffee's Fragrance/Aroma, Flavor, Acidity, Body and Aftertaste. To be considered specialty or premium, coffee must exhibit distinct attributes in these five areas. Moreover, such coffee must be free from odors, faults and taints. We source and import the coffee directly from Bolivia, Brazil, Colombia & Costa Rica so that quality is assured every step of the way. We cup, roast and drink our own coffee everyday. Most of our customers are amazed how good this coffee is and most no longer buy Bolivian, Brazilian, Colombian, Costa Rican, Decaf and/or Cup of Excellence® coffees from anyone else. Feel free to contact us if you have any questions about coffee and about coffee roasting. All questions are welcome and answered promptly. Coffee Grading: We are the rare coffee importer that objectively and professionally grades all its coffees. Our green coffee beans are cupped, graded and categorized before they are offered for sale. Let's face it, not all coffee is the same, and not all coffee from a single country (or even a single region) is the same. The only way to ensure consistently high-quality coffee is to buy professionally graded coffee from a seller that not only talks the talk but also walks the walk and grades all its coffees. Unlike some coffee sellers that claim that their coffee is "top grade" or "the best of the best" without any documentation or proof, we undergo strict coffee grading. Using the objective and strict SCAA criteria and our own criteria, throughout the year we regularly visit coffee farms, processing, transporting and warehousing facilities in order to complete our grading and classification. We buy at quality-auctions and also at the farm gate (using our own trucks) and we are always cupping, cupping and cupping. Because "specialty coffee" covers a very broad spectrum and there are no further standards for it, we have created our own categories and groupings. We hope they will eventually become the industry standards We present the results of the grading process, under our "Coffee Specs", which is the first thing you see on our listings. The most important factors determining the quality of coffee are bean varietal (whether Arabica or Robusta); bean uniformity and density; altitude grown; soil quality; care and technique in growing, processing, handling and transporting. The ultimate "proof is in the pudding" criteria, of course, is the cupping score. So next time you buy coffee, don't just take your seller's word for it, ask for objective grading results. When in doubt, just cup a random sample. That is what we do every day. Shipping Policy: We ship the same business day payment is received, if payment is received before 2:00pm (EST). Otherwise, we ship the following business day. Coffee beans will be shipped for free to the US (all 50 states) via FedEx Ground, or USPS Priority Mail, depending on the buyer's address. We use these shipping services because they offer tracking service and a delivery date, instead of lower-cost Parcel Post which does not offer tracking and you never know when you will get your shipment. The additional cost for the better service is nominal. We ship worldwide. We ship to the address on record with the payment account (PayPal or credit card). Feedback & Customer Satisfaction Policy: We are in the business of keeping customers happy above all reasonable costs, but we are also human. If you feel your experience with us has been less than exemplary, please contact us and we will try our hardest to keep you a happy, loyal, repeat customer. Feedback is final, once given it cannot be taken back. If you change you mind about buying a product, before we ship, we will gladly cancel the transaction rather than report you as a non-paying bidder. Likewise, please contact us before giving us negative feedback. We will make things right. Because this is a food item, we cannot accept returns.
