Supremo is a grade based on size and number of defects. The bean size is screen 17 and up where Excelso grade is bewteen screens 14 and 16.5. Supremo beans are large and uniform with 90% of them over screen 18.

The cooperative consists of 40 farms with a total of 200 hectares of coffee harvested. The harvest period is between June and September and the coffee is processed between the months of July and December when it is wet milled and sun dried.
