It’s a fertile land, abundant with natural resources and is so well-known for its exotic products that it became known hundreds of years ago as “the spice island.” Today Indonesia remains rich; not only in resources but in its varied cultures. The country is a paradise for visitors who never fail to marvel at the beauty of its scenery, the variety of its arts, and the warmth of its people. Agriculture has been the traditional backbone of Indonesia’s economy. The country is a major producer of several important cash crops grown either on large estates or by smallholders. The nation is now the world’s second largest exporter of palm oil. Other significant cash crops are sugar cane, cinnamon, nutmeg, tobacco, cloves, paper, cocoa, tea, and coffee. Blessed by good soil and abundant rainfall, Indonesia is the world’s third leading producer and exporter of coffee. Approximately ninety percent of Indonesia’s total production is Robusta, with Arabica making up the remaining ten percent. Indonesia’s coffee industry planners recognize a rising worldwide demand for Arabica and are taking steps to replace Robusta cultivation with Arabica wherever possible. Indonesian coffee is known everywhere for its high quality, fine taste, and distinct aroma. The beginning of the coffee industry in Indonesia can be traced back to the arrival of Arabica coffee on the shore of Java in 1699. Although the native farmers of Java were the first to cultivate Arabica, it soon spread throughout many provinces of Indonesia. By 1712, years of harvesting provided the first bag of Indonesian coffee to be exported to Amsterdam. Over the years, as exports have grown, so has the reputation of Java coffee. Cupping Notes are gathered by using the cupping method to get a general idea of what natural flavor notes a coffee contains. Flavor profile will vary between different brewing methods and roast profiles. For Best Results it might be necessary for the coffee to degas 24 - 48 Hours when it arrives at your location to release trapped gases from within the beans which is a result from the roasting process. CHEERS!! 5 Lbs of Fresh Green Un-Roasted Arabica 100% Mexico Huatusco Altura E/P Milling Process: Fully Washed Grade: High Grown Screen:17/18 Cup Characteristics Caramel, Red Apple, Orange Body: Rounded Acidity: Low INFORMATION REGION: HUATUSCO, VERACRUZ Surrounded by the mountains of Veracruz, Huatusco is a weekend destination for many residents of Mexico City and Xalapa. The same features that attract tourists (the striking mountains, moderate temperatures and flowing rivers) also make this area perfect for growing coffee. SMALL FAMILY FARMS The coffee farms around Huatusco are mostly small, family-owned operations. The typical farm in the region consists of less than 12 acres. EUROPEAN PROCESSED (EP) A European-Processed (EP) coffee, this selection has been carefully sorted by hand (instead of with screens). European-processed coffees are generally of a higher quality than those that have not been hand-sorted, but the difference in quality can be especially noticeable with hard bean crops, like this one. Hard-bean coffees grow at high elevations and are relatively small. Although the difficult growing conditions they face produce a higher quality bean, their smaller size makes sorting out any immature beans extra important. That’s why European processing can be especially helpful when working with hard-bean selections. Cupping Notes are gathered by using the cupping method to get a general idea of what natural flavor notes a coffee contains. Flavor profile will vary between different brewing methods and roast profiles. As always if you Have any Questions or Concerns Feel free to Reach out to us.

With regards to acidity and brightness, Kenya is widely recognized as the bar, and our Kenya AB has been sourced and expertly processed, a top-notch offering not to be missed. It is cooperatively produced by many small farmers growing in the central Kenyan farmlands surrounding Mt. Kenya. The individual lots are consolidated at the local mill where they undergo a stringent double fermentation method, sometimes referred to as ‘Kenyan Process,’ that accentuates its complexity. The parchment is sun dried on raised beds and transported to the Nairobi Coffee Exchange where it is graded, cupped for quality and ultimately sold . Kenya has long been established as leader in high-grade East African arabica—its best lots are famed for their fruity, clean, complex profiles, offering balance and pronounced tasting notes of everything from berries and stone fruit to sweet citrus. The Nairobi Coffee Exchange auctions are a quality based payment system that functions as the nerve center of a well oiled industry built upon decades of lab-based agri-research, applied farming and a strong network of cooperatives. At the exchanges small farmers have a ‘seat at the table’ so to speak, where they can access a wide range of international buyers who have the will and capital to outbid one another in the perennial quest for a perfect cup. Truth be told, Kenya’s growers are owed much of today’s industry praise; for generations they have pushed the envelope and tested the limits of farming and processing capabilities in order to embrace advances in growing science. The main growing regions extend from the 17,000 foot, central peak of Mount Kenya all the way to the outskirts of the capital city of Nairobi to the south. Another portion of arabica farmlands lie on the slopes of Mt. Elgon, against Kenya’s western border with Uganda. The ‘Kenyan Process’ double fermentation method requires pulped cherries be twice soaked for 12 to 24 hours in fermentation tanks with additional rinsing in between. When finished the beans are separated by density by way of a water channel, removing the less dense “floaters”. The beans then undergo one final soak to reportedly promote healthy amino and fatty acid structures. Next the beans are sun-dried on raised beds under strict supervision for approximately 1 to 2 weeks until their moisture is reduced to 11–12%.Cupping Notes are gathered by using the cupping method to get a general idea of what natural flavor notes a coffee contains. CHEERS!! 5 Lbs of Fresh Green Un-Roasted Guatemala Huehuetenango Coffee Beans Guatemala SHG EP Milling Process: Washed Cup Characteristics Maple, orange, milk chocolate and fruit notes; sweet and complex. Aroma: Sweet Body: Syrupy Acidity: Juicy INFORMATION: Huehuetenango is one of Guatemala’s three non-volcanic regions, as well as its highest and driest under cultivation, making it one of the best for coffee production. Currents of hot air sweep up from the Plains of Tehuantepec, in Oaxaca, Mexico, and mix here with the cool air descending from the Cuchumatanes Mountains, creating a microclimate that’s protected from frost and allowing coffee to be cultivated at up to 2,000 meters. Huehuetenango’s extreme remoteness requires that nearly all producers process their own coffee. Fortunately, the region has abundant rivers and streams, making it relatively easy for producers to set up mills. Still more fortunately, Huehue’s geographic conditions help to create exceptional coffees with a distinct acidity and fruity flavors. SHB (Strictly Hard Bean) specifies that the coffee was grown at an altitude above 1,350 meters. (This term is also synonymous with SHG/Strictly High Grown, a classification that’s higher than HB.) EP (European Preparation) means that the green coffee was sorted by hand to remove any defective beans and foreign material.

We have other Coffees available as well check out our Ebay Store for More! Coffee Origin Information Most people in North America think of India as a leading producer of fine teas. Few associate India with top grade specialty coffees. India has been a producer and exporter of exceptional coffees for over 150 years. Today, India is the fifth largest producer of Arabica coffee in the world, behind Brazil, Colombia, Mexico, and Ethiopia. India’s romance with coffee goes back nearly 400 years. Legend credits a Muslim pilgrim, Baba Budan, with bringing back seven coffee seeds from a pilgrimage to the Holy Land. He is said to have planted them near his mountain cave in Chikmahlur, Karnataka State, now considered the cradle of Indian coffee. Commercial cultivation of coffee in India began in 1840 when the British established coffee plantations throughout the mountains of Southern India. They found the tropical climate, high altitude, sunny slopes, ample rainfall, soil rich in humus content, and well drained sub soil ideal for coffee cultivation. The color, shape, and size of the beans as well as their aroma and taste are the results of special post-harvest processing. Indian coffee was historically shipped to Europe in wooden sailing vessels, taking four to six months to sail around the Cape of Good Hope before reaching their destinations. Coffee, stored below the water line and kept in a humid atmosphere by moisture seeping through the wood, underwent a form of treatment on its long voyage to market. When the coffee reached Europe, its color had changed from bright green to pale gold and its new crop acidity had disappeared. This "Monsooning" process was later systematically replicated in India with the goal to consistently reproduce the familiar flavor from the historic voyages to the European ports. The Monsooning process consists of exposing natural coffee beans in layers of 4-6 inch thickness to moisture-laden Monsoon winds in a well ventilated brick or concrete-floored warehouse. This process is carried out on the West Coast of India, making use of the winds from the Arabaian Sea during the Southwest Monsoon months of June through September. The processing begins with top grade beans, Arabica Cherry-AB, that has already been processed by the dry method. To equalize moisture absorption, the beans are raked frequently, followed by bulking and re-bagging at regular intervals. At the end of the monsoon season, this coffee is re-bulked, graded again, bagged and moved to a drier region for longer-term storage. In this 12-16 week process the beans absorb moisture in stages, swelling to nearly twice their original size and developing colors ranging from pale gold to light brown. Due to this Process of the Beans absorbing various degrees of moisture and swelling to various sizes it is hard to get an even roast throughout but The end result is a special, unique flavor. Aroma:Slightly Earthly Body:Full Acidity:Low INFORMATION Many of the islands of Indonesia were formed by volcanoes and still benefit from soil that's rich in volcanic ash and ideal for growing coffee. It's no wonder that some of the worlds most famous coffees are grown on the islands of the Malay Archipelago of Indonesia: Sumatra, Sulawesi and Java. Approximately 15 percent of all the coffee grown in Indonesia is Arabica. Sumatra is the second-largest island in the Republic of Indonesia. Sumatra Mandheling coffee is grown on the lofty volcanic slopes of Mount Leuser near the port of Padang, in the Batak region of west-central Sumatra. Mandailing, spelled here correctly, is technically an ethnic group in Indonesia, not a region, as is Batak. Coffee trees were originally brought to Indonesia in the early 19th century by the Dutch, who sought to break the world-wide Arabic monopoly on the cultivation of coffee. Within a few years, Indonesian coffee dominated the worlds coffee market. Yet by the end of the century disease had completely destroyed the crop. Coffee trees were successfully replanted and quickly gained a large share of the world market until the plantations were ravaged again during World WarII. Giling Basah, the unique method used in the production of Sumatran coffees, results in a very full body with a concentrated flavor, garnished with herbal nuances and a spicy finish. It involves hulling the parchment off the bean at roughly 50 percent moisture content (compared to 10 to 12 percent moisture, in most other regions). This unique process results in Sumatra's trademark flavor profile (low acidity, richness that lingers on the back of the palate, and a chocolate finish) and gives the green beans their signature color.

They source around one-third of the world's coffee, making them the largest coffee producer in the globe! Of course, most of this is lower grade Arabica. However, this country is capable of producing specialty coffees. This particular type is a standard specialty quality coffee. It is dry-processed, meaning the beans are patio-dried while they are still in the cherry. Since the coffees are dried in contact with the sweet mucilage, the coffee's cup profile will be heavy in body, sweet, smooth, and complex. The 14/16 screen size has smaller inconsistent beans and more varying fruit notes that can turn up in smaller screen sized beans, which is an indication of varying bean maturity. This type carries three quality classifications: NY (New York) 2/3; specifies the quality is standard to the Green Coffee Association of New York. 2/3 refers to the amount of defects permitted in the lot; a maximum of nine secondary defects, and no primary defects. SSFC (Strictly Soft Fine Cup); Strictly Soft beans are grown at relatively low altitudes (under 1200 meters). Beans grown at lower altitudes mature quickly and produce a lighter, less dense bean. This term also means the beans are free of hard rioy taints. Fine Cup means it is a specialty grade coffee. 14/16 refers to the screen size. These beans are one screen size smaller than 17/18.
