They source around one-third of the world's coffee, making them the largest coffee producer in the globe! Of course, most of this is lower grade Arabica. However, this country is capable of producing specialty coffees. This particular type is a standard specialty quality coffee. It is dry-processed, meaning the beans are patio-dried while they are still in the cherry. Since the coffees are dried in contact with the sweet mucilage, the coffee's cup profile will be heavy in body, sweet, smooth, and complex. The 14/16 screen size has smaller inconsistent beans and more varying fruit notes that can turn up in smaller screen sized beans, which is an indication of varying bean maturity. This type carries three quality classifications: NY (New York) 2/3; specifies the quality is standard to the Green Coffee Association of New York. 2/3 refers to the amount of defects permitted in the lot; a maximum of nine secondary defects, and no primary defects. SSFC (Strictly Soft Fine Cup); Strictly Soft beans are grown at relatively low altitudes (under 1200 meters). Beans grown at lower altitudes mature quickly and produce a lighter, less dense bean. This term also means the beans are free of hard rioy taints. Fine Cup means it is a specialty grade coffee. 14/16 refers to the screen size. These beans are one screen size smaller than 17/18.

It occupies the high plateau region between the Nile plains of the Sudan and Eritrea. Ethiopia is one of the largest countries in Africa with an area of over 1.13 million square kilometers. It has a rugged topography with altitudes ranging from around 100 meters below sea-level in the Danakil depression to 4,600 meters above sea-level in the Semien Mountains. Ethiopia is the primary center of origin of the Arabica coffee plant. Coffea Arabica has been growing wild in the forests of the Southwestern Highlands of Kaffa and Buno districts of Ethiopia for thousands of years. As legend has it, coffee was discovered in Ethiopia in the 9th century by a goat-herder named Kaldi. He noticed that his goats became hyper after eating the cherries from the coffee tree, so he tried it himself. A monk approached Kaldi after he consumed the cherries and took some to his monastery. The monk roasted and brewed the coffee to share with other monks. As a result, they were able to stay awake during long nights of prayer. Since then, coffee has been widely accepted as a stimulant drink. Ethiopia has over 70 ethnic groups that speak over 200 languages. As a result, coffee is referred to as Bunna (Amharic), Bun (Tigrigna), Buna (Oromifa), Bono (Kefficho), and Kawa (Guragigna). Some argue that most names for coffee are derived from the names of the districts Kafa and Buno. It would be another 100 years, when coffee was planted in the highlands around the Volcano “Baru,” before commercial cultivation of Panama coffee was successful; however, nearly all coffee grown in Panama was used for internal consumption and the country was better known for exporting tea. Panamanians drank more coffee than they grew and had to import coffee to meet demand until the 1940’s. Exports grew slowly over the years, peaking in 1996 at 181,000 bags. Although there have been a few spikes since then, exports have settled down around 50,000 bags for the last 10 years as producers shifted their focus from volume to quality. More than 50% of coffee production is still consumed domestically. The Brunca region is marked by mountainous terrain and volcanic soil. High altitudes provide the cool climates that are ideal for growing sweet and dense beans. The Don Claudio coffee is picked in the area of La Piedra De Rivas and for this particular coffee, the ripe cherries are picked during the central part of the harvest. The main varietals are Caturra and Red Catuai. Farmers selectively handpick cherries and deliver them to a nearby wet mill. The mill follows processing methods that are designed to carefully protect the environment. In Costa Rica, this typically means using centrifugal force to remove mucilage, in lieu of fermenting. This method helps reduce water use and limits the amount of excess nutrients in water run-off from the mill. Parchment is washed and sundried. The cherries are all processed by the Beficio Coopeagri. The Don Claudio coffee is processed in both washed and natural methods. Our Don Claudio is fully washed. Coopagri, Costa Rica’s largest farmer cooperative, was founded in 1962 to help increase production and market access for small- and medium-sized and boasts more than 10,000 members.
