THANK YOU FOR BEING PATIENT DURING THESE HIGH SHIPPING VOLUME TIMES AND HAVE A GREAT HOLIDAY !!! CHEERS!! 5 Lbs of Fresh Green Un-Roasted Arabica Rwanda Green Coffee Beans RWANDA - INZOVU - AFRICA Milling Process: Washed Harvest: March Grade: AA Cup Characteristics Caramel, Nutty, Citrus, Floral finish Aroma: Floral Body: Creamy Acidity: Citrus INFORMATION These beans brew a delicate cup with pleasant, citrus notes. You can enjoy that under a nice, rich aroma. If you want your coffee to taste a bit stronger, go for a slightly finer grind than usual with these beans. Additionally, you could up the coffee to water ratio a bit to achieve your preferred strength. Across the board, Rwandan growing regions tend to have nice, high-altitudes with nitrogen-rich volcanic soil. Origin: Inzovu What makes Rwanda Inzovu coffee so special is that it’s produced by over 25,000 smallholder coffee farmers. Where the majority of the farmers only have around about 200 trees each to look after. The coffee production in Rwanda has seen exponential growth, benefiting the countries economic well-being. Due to the popularity and quality of this coffee, over the last several years the price paid directly to the farmers has significantly increased. The Inzovu is a special project where only specially selected lots are combined together in order to supply roasters with a consistent specialty quality coffee available in larger volumes. The coffee it self is grown in fertile volcanic soil. The altitude ranges from 1200 to 1800 meters above sea level across all of the farms. The harvest takes place from May all the way through to July. After the cherry has been harvested it is then brought into a washing station, for processing. The coffee is graded, milled, hand sorted and sun dried on tables. Inzovu comes from a number of different wet mills including Coffee Vilages, Gasange, Gitesi, Izere, Karama, Kigembe, Kirezi, Mahembe, Mayogi, Mukindo, Mutovu, Mwasa and Nasho. This is a washed lot meaning that after the cherry is harvested, immature green cherries are picked out and over-ripe cherries are separated in flotation tanks. Pulped parchment is fermented for 24-48 hours depending on the local weather conditions at the time. Then the clean, washed parchment is set aside for drying. All the coffees are dried on raised beds anywhere from 15-22 days prior to dry milling in Kigali. To understand this coffee, you need to know where and how it is grown. The Rwandan coffee that is gaining global recognition for its high quality is generally from on farms located on mountainsides between 5200 and 6500 feet above sea level. However, the bulk of the farms are still located in the 4,000 to 6,000 feet range. The high altitudes, volcanic soil, plentiful sunlight and equatorial mists favor Arabic growth. The plants flower in September and October, and they are processed from March to July. In Rwanda, the vast majority of the coffee is fully wet processed. This is a more recent development in the coffee industry there but is largely responsible for the increase in production volume and quality. Unlike in other parts of the world, these washing stations are not linked to massive coffee estates to process everything in house. Instead, these washing stations cater to a number of smaller farmers who often grow coffee in addition to other crops. The process is also referred to as fully washed or double washed. It involves soaking the beans twice, and is much more widespread in Africa than it is in other regions such as Latin America. Wet processing is best suited for complex flavor profiles and is responsible for the noticeably clean, bright and fruity notes that Rwandan coffee is now known for. The favorable climate plus the high-quality processing makes for some seriously delicious coffee. Across the board you can expect a rich, creamy body with a buttery overtone and caramel aftertaste. As far as flavor, your tastebuds will delight in the bright, citrusy flavors accompanied by floral or fruit notes. On top of that baseline, Rwandan coffees often introduce several layers of complexity. So you could be surprised with anything from notes of clove or cinnamon to nuttiness and white chocolate. You may even detect some dates or plum notes. Plus, on top of it all, the aroma carries hints of orange blossom and lemon. Cupping Notes are gathered by using the cupping method to get a general idea of what natural flavor notes a coffee contains. Flavor profile will vary between different brewing methods and roast profiles. As always if you Have any Questions or Concerns Feel free to Reach out to us.

5 LBS PERUVIAN PERU UNROASTED DECAFFEINATED GREEN COFFEE BEANS – DECAF

5 Lbs of Fresh Decaffeinated Green Un-Roasted Arabica DECAF Coffee Beans DECAF UN-ROASTED COFFEE BEANS Milling Process: Washed Grade: Hard Bean, High Grown Screen:14/16 Cup Characteristics Sweet Notes, Full Creamy Body; Well-balanced and Complex. Body: Good Body Acidity: Citric Acidity INFORMATION Organic Peruvian coffee comes from the Chanchamayo province, located in central Peru. It grows at an altitude between 1200 – 1350 meters above sea level. The farms belong to small producers with two hectares of land that generate around 3,000 lbs. of coffee per harvest. This coffee is shade grown at high altitudes in order to produce a denser bean and a more complex cup characteristic as a result of its slow maturation process. In addition, the producers have made a remarkable effort to produce a high quality bean by only using sustainable farming practices. They have eliminated all use of chemical pesticides and fertilizers, and instead use natural compost. Their efforts have allowed them to become organically certified farmers, a very demanding sustainability seal.

They source around one-third of the world's coffee, making them the largest coffee producer in the globe! Of course, most of this is lower grade Arabica. However, this country is capable of producing specialty coffees. This particular type is a standard specialty quality coffee. Itt is dry-processed, meaning the beans are patio-dried while they are still in the cherry. Since the coffees are dried in contact with the sweet mucilage, the coffee's cup profile will be heavy in body, sweet, smooth, and complex. The 17/18 screen size has a more consistent flavor without the pungent fruit notes that can turn up in smaller screen sized beans, which is an indication of varying bean maturity. This type carries three quality classifications: NY (New York) 2/3; specifies the quality is standard to the Green Coffee Association of New York. 2/3 refers to the amount of defects permitted in the lot; a maximum of nine secondary defects, and no primary defects.SSFC (Strictly Soft Fine Cup); Strictly Soft beans are grown at relatively low altitudes (under 1200 meters). Beans grown at lower altitudes mature quickly and produce a lighter, less dense bean. This term also means the beans are free of hard rioy taints. Fine Cup means it is a specialty grade coffee.17/18 refers to the screen size. These beans are one screen size larger than 14/16, denoting a larger bean. Larger bean size is generally linked to higher quality. Cupping Notes are gathered by using the cupping method to get a general idea of what natural flavor notes a coffee contains. Flavor profile will vary between different brewing methods and roast profiles. For Best Results it might be necessary for the coffee to degas 24 - 48 Hours when it arrives at your location to release trapped gases from within the beans which is a result from the roasting process. CHEERS!! 5 Lbs of Fresh Green Un-Roasted Arabica Monsooned Malabar Coffee Beans INDIA MONSOONED MALABAR Milling Process: Monsooned Grade: A Screen: 17 Cup Characteristics Spicy, Earthy. Smoky, Tobacco Notes, Wood Notes, Medium Body, Medium Acidity. Aroma: Spicy Body: Medium Acidity: Medium INFORMATION The color, shape, and size of these beans from India, as well as their aroma and taste, are the result of special post-harvest processing. Historically, coffee was shipped to Europe in wooden sailing vessels that took four to six months to sail around the Cape of Good Hope and up to their destinations. Stored below the water line and kept in an atmosphere made humid by seawater seeping through the wood, the beans underwent a transformation on their long journey to market. The bright-green beans would arrive pale gold, doubled in size and with an entirely new cup profile. This "monsooning" process was later systematically replicated in India, with the goal of providing European customers with the cup profile they'd first become accustomed to from India and continued to demand. The monsooning process consists of exposing natural coffee beans, in 4- to 6-inch-thick piles, to moisture-laden monsoon winds in a well-ventilated brick or concrete-floored warehouse. This process is carried out on the West Coast of India, making use of the winds from the Arabian Sea during the southwest Monsoon months of June through September. The processing begins with top-grade beans, Arabica cherry AB, that has already been processed by the dry method. To equalize moisture absorption, the beans are raked frequently, followed by bulking and re-bagging at regular intervals. During this 12- to 16-week process, the beans absorb moisture in stages, swelling to nearly twice their original size and developing colors ranging from pale gold to light brown. After several weeks, the coffee is re-bulked, graded again, bagged and moved to a drier region for longer-term storage. The end result is a unique flavor that (like licorice, or cilantro) appeals to a group of ardent fans. It adds interesting notes to a blend and a rich crema to espresso.

Its a fertile land, abundant with natural resources and is so well-known for its exotic products that it became known hundreds of years ago as the spice island. Today Indonesia remains rich; not only in resources but in its varied cultures. The country is a paradise for visitors who never fail to marvel at the beauty of its scenery, the variety of its arts, and the warmth of its people. Agriculture has been the traditional backbone of Indonesias economy. The country is a major producer of several important cash crops grown either on large estates or by smallholders. The nation is now the worlds second largest exporter of palm oil. Other significant cash crops are sugar cane, cinnamon, nutmeg, tobacco, cloves, paper, cocoa, tea, and coffee. Blessed by good soil and abundant rainfall, Indonesia is the worlds third leading producer and exporter of coffee. Approximately ninety percent of Indonesias total production is Robusta, with Arabica making up the remaining ten percent. Indonesias coffee industry planners recognize a rising worldwide demand for Arabica and are taking steps to replace Robusta cultivation with Arabica wherever possible. Indonesian coffee is known everywhere for its high quality, fine taste, and distinct aroma. The beginning of the coffee industry in Indonesia can be traced back to the arrival of Arabica coffee on the shore of Java in 1699. Although the native farmers of Java were the first to cultivate Arabica, it soon spread throughout many provinces of Indonesia. By 1712, years of harvesting provided the first bag of Indonesian coffee to be exported to Amsterdam. Over the years, as exports have grown, so has the reputation of Java coffee.

5 Lbs of Fresh Green Un-Roasted Arabica from Venezuela Maracaibo Venezuela Region: Maracaibo Milling Process: Natural Screen:14/16 Cup Characteristics Sweet Notes, Slight Rich Flavor, Balanced Acidity, Smooth, Clean Crisp Finish Aroma: Soft Body: Medium Acidity: Balanced INFORMATION Coffee production in Venezuela began in the late eighteenth and early nineteenth centuries in the Premontane shankarof the Andes mountains. José Gumilla, a Jesuit priest, is credited with introducing coffee into Venezuela, in 1732. Its production is attributed to the large demand for the product, coupled with cheap labour and low land costs. It was first exported to Brazil.Coffee production in Venezuela led to the "complex migration" of people to this region in the late nineteenth century.Though Venezuela was ranked close to Colombia at one time in coffee production, by 2001, it produced less than one percent of the world's coffee. Coffee production occurs in the Coast Range and the western Andean region with the only requirements being sufficient top soil and moisture. The coffee production system followed in the Andes region, which is the premontane moist forest, is a multilayered system (3 to 4 layered canopies) in which there are multi-species of plants. In this system, trees provide the shade needed for growth of coffee. This region is a part in the three geographical regions of Venezuela namely, the Mountains and Caribbean Coastal region, the Llanos region, and the Orinoco River Delta region, and the Guayana region. The plantations are generally in the attitudinal range of 1,000–5,000 feet (300–1,520 m), bordering with Colombia. The fertile region in the highland areas consisted of Táchira, Mérida, and Trujilo, known as the Andean frontier region, and are suitable for growing coffee which could be exported from the Maracaibo's port. This resulted in increased production of coffee in the 19th century. The “Maracaibos” coffee exported from the Maracaibo port has sub varieties called Cucuta, Mérida, Trujillo, and Tachira. The eastern mountains coffee is known as Caracas, named after the capital city. While these are the local varieties of coffee grown in Venezuela, the basic universal coffee varieties under which the Venezuelan one fall under are the arabica (Coffea arabica L.)

CHEERS!! 5 Lbs of Fresh Green Un-RoastedArabicaKenyaGreen Coffee Beans KENYA - AFRICA Milling Process:Washed Harvest: July Grade: AA Cup Characteristics Notes of currant, black tea and hint of blackberry. Body:Medium Acidity: Bright Altitude:4,600 6,500 ft (1400 - 2000m) INFORMATION Our Kenya AB grade (15/16 screen) is a slightly smaller bean than Kenya AA, and is regarded by some as an overall superior coffee. With regards to acidity and brightness, Kenya is widely recognized as the bar, and our Kenya AB has been sourced and expertly processed, a top-notch offering not to be missed. It is cooperatively produced by many small farmers growing in the central Kenyan farmlands surrounding Mt. Kenya. The individual lots are consolidated at the local mill where they undergo a stringent double fermentation method, sometimes referred to as Kenyan Process, that accentuates its complexity. The parchment is sun dried on raised beds and transported to the Nairobi Coffee Exchange where it is graded, cupped for quality and ultimately sold . Kenya has long been established as leader in high-grade East African arabicaits best lots are famed for their fruity, clean, complex profiles, offering balance and pronounced tasting notes of everything from berries and stone fruit to sweet citrus. The Nairobi Coffee Exchange auctions are a quality based payment system that functions as the nerve center of a well oiled industry built upon decades of lab-based agri-research, applied farming and a strong network of cooperatives. At the exchanges small farmers have a seat at the table so to speak, where they can access a wide range of international buyers who have the will and capital to outbid one another in the perennial quest for a perfect cup. Truth be told, Kenyas growers are owed much of todays industry praise; for generations they have pushed the envelope and tested the limits of farming and processing capabilities in order to embrace advances in growing science. The main growing regions extend from the 17,000 foot, central peak of Mount Kenya all the way to the outskirts of the capital city of Nairobi to the south. Another portion of arabica farmlands lie on the slopes of Mt. Elgon, against Kenyas western border with Uganda. The Kenyan Process double fermentation method requires pulped cherries be twice soaked for 12 to 24 hours in fermentation tanks with additional rinsing in between. When finished the beans are separated by density by way of a water channel, removing the less dense floaters. The beans then undergo one final soak to reportedly promote healthy amino and fatty acid structures. Next the beans are sun-dried on raised beds under strict supervision for approximately 1 to 2 weeks until their moisture is reduced to 1112%.Cupping Notes are gathered by using the cupping method to get a general idea of what natural flavor notes a coffee contains. Flavor profile will vary between different brewing methods and roast profiles. As always if you Have any Questions or Concerns Feel free to Reach out to us.

Therefore, they are mountainous and have rich soil that is ideal for growing coffee. It is no wonder that some of the world’s most famous coffees are grown on the islands of the Malay Archipelago of Indonesia: Sumatra, Sulawesi, and Java. Approximately 15% of all the coffee grown in Indonesia is Arabica. Sumatra is the second largest islandof the Republic of Indonesia. Sumatra Mandheling coffee is grown on thelofty volcanic slopes of Mount Leuser near the port of Padang in the Balak region of west-central Sumatra. Coffee trees were originally brought to Indonesia in the early 19th century by the Dutch, who sought to break the world-wide Arabic monopoly on the cultivation of coffee. Within a few years, Indonesian coffee dominated the world’s coffee market. Yet by the end of the century disease completely destroyed the crop. Coffee trees were successfully replanted and quickly gained a large share of the world market until the plantations were ravaged again during World WarII. “Mandailing”, spelled here correctly, is technically an ethnic group in Indonesia, not a region, as is Batak. The unique method used in its production results in a very full body with a concentrated flavor, garnished with herbal nuances and a spicy finish. Giling Basah, the name of the traditional Sumatran process, involves hulling the parchment off of the bean at roughly 50% moisture content; for comparison, most other processes hull coffee at around 10-12% moisture. This unique Sumatran process results in a trademark flavor profile (low acidity and a richness that lingers on the back of the palate) and gives the green beans a signature dark color. Notes of chocolate are evident in the finish. We buy Grade 1 Sumatras as Double-Picked (DP) or Triple-Picked (TP), referring to the number of times the coffee is hand-picked for defects. This extra quality control results in a very consistent cup including only cherries at optimum ripeness.
